Physicochemical Properties and Fatty Acid Composition of Tamarindus Indica Seeds Oil

A research work was carried out on the physicochemical properties and fatty acid composition of Tamarindus indica seeds oil using standard Analytical methods PYE Unican 304 Gas Chromatography. The results for seed were: value (5.10), peroxide (9.60), free (2.05), iodine (82.50), saponification (279.20), refractive index (1.467) specific gravity (0.8423).The indicated that oils might be useful domestic consumption due to low value, value. acids compositions showed contained higher unsaturated (74.0%) saturated (26.0%) with most abundant being linoleic methyl ester (44.967%), thus making it more nutritionally important.
